Sooooooooo I got my March J. Crew Style Guide in the mail yesterday.

I am not kidding when I say, I WANT IT ALL. Living in a studio apartment and not working means I will possibly be buying about 1% of what I want. But hey, a girl can dream.

The Sera top (lavender silk sleeveless) is a must buy this season. It’s very versatile and can be worn to work + out when paired with the correct bottom. Unfortunately it’s sold out in my size right now but I’m hoping it comes back soon! The color-block sweater and long-sleeve shirt are also a trend I’m loving lately.

Floral.. Can’t get enough of it. I will 100% be buying the floral shorts before we go to Florida. I am also in need of a good pair of white jeans that stop at your ankles. Any suggestions on a good pair? I plan to try these on this weekend and have had good luck with j. crew skinnies in the past. I’m also loving the white shorts. It’s hard to see how cute they are here since I had to add the hot pink background but a dressy pair of white shorts is a necessity!

Can we start with the back-up battery for your iPhone? J.Crew, you’re my hero. I’m also still loving huge necklaces and sunglasses that are way too expensive for me to lose after owning them for 1 month.

I plan to take a peak into J. Crew this weekend (dangerous!) so I’ll let you know what if I get anything.

My favorite meal of the day was definitely the Spaghetti Squash Mac & Cheese! I kinda sorta ate the entire dish by myself in 3 seatings. Whoops!

Baked Mac & Cheese Spaghetti Squash

Ingredients

  • 6 cups cooked spaghetti squash
  • 1 tbsp butter
  • 1 tbsp earth balance (vegan butter – or use regular butter. I wanted to lighten the recipe)
  • 1/4 cup all purpose flour
  • 2 cups unsweetened original almond milk
  • 1 cup low sodium vegetable broth
  • 1 cup Low Moisture Park Skim shredded Mozzarella Cheese
  • Salt & Pepper
  • 1 tsp smoked paprika
  • Roasted Asparagus (1 lb)
  • 1/8 cup grated parmesan
  • 1/4 cup panko
  • Olive Oil cooking spray

Directions

  • Bake your spaghetti squash. See tutorial here.
  • Break your asparagus into 1 inch pieces and roast for 7 minutes (375 degrees, olive oil, salt & pepper – 7 minutes)
  • Spray a 9×13 baking dish with Olive Oil spray. Preheat oven to 375° (should be heated from asparagus & spaghetti squash).
  • In a large, heavy skillet, melt butter. Add flour and cook over low heat stirring with a whisk.
  • Add milk and vegetable broth and continue whisking, raising heat to medium-high until it comes to a boil and becomes smooth and thick. Season with salt and pepper.
  • Once it becomes thick, remove from heat, add mozzarella cheese and mix well until cheese is melted.
  • Adjust salt and pepper to taste, add cooked spaghetti squash, smoked paprika and asparagus.
  • Pour into baking dish. Top with grated parmesan cheese and panko.
  • Spray a little more Olive Oil on top.
  • Bake for 15-20 minutes, then broil for a few minutes to get the panko golden.

Grandma Turns 70!

Today is my Grandma’s actual birthday so I’d like to start off today by saying HAPPY BIRTHDAY to the prettiest 70-year-old I know!

Since we live a couple of states away we decided to celebrate over the weekend with the fam.

We posted some picture of the birthday girl in her early 20’s while we made dinner and admired her lovely smile and fun personality that she still has to this day.

For dinner we made Chicken Cacciatore in the Crock Pot, served it over linguine with garlic bread and caesar salad on the side.

Her last gift. About a month ago I hacked into my Grandma’s email account and sent emails to her friends/family asking for their favorite memory involving her. I was aiming for 70 responses but ended up with 76! She’s so popular 🙂

She was ecstatic when she opened the box to see how many people she has touched throughout the years.

We had her read a couple memories out-loud and told her to take her time and enjoy reading the rest without an audience.

Yesterday Adam left work around noon to pick me up for our day date in NYC!

For Valentine’s Day he bought tickets for us to see Cinderella on Broadway!

We drove into the city to avoid public transportation which is a lot quicker but 17 times the price. While we were sitting in traffic we decided that having TV’s in the middle of times square is very distracting. It was easy to get lost in the screen instead of checking to see if the car in front of us had been able to move.

When we arrived at the venue, there was a long line of people waiting to get in. I knew that there would most likely be a lot of children there because it was during the day on a weekday but I was shocked that the line was wrapped around the building!

While we waited in line, this sign outside of Crumbs did a great job of tempting me to come inside.

Good thing Adam has self-control or that would have been inhaled immediately.

The show was a modern day Cinderella and while I’m a Disney fan, I prefer this version because I didn’t know exactly what was going to happen next. The cast was amazing at making costume changes on stage without the audience knowing, I was extremely impressed! I won’t give away any of the story-line in case you will be seeing this show, but I highly recommend!

We sat on the mezzanine level, which I’ve always enjoyed more than Orchestra and even though the seats were a little crowded, the view was perfect!

Roasted Corn & BBQ Shrimp Soup 

(slightly adapted from Bev Cooks)

Ingredients

  •  3 – 4 Tbs. extra-virgin olive oil, divided
  • 1 pound shrimp, peeled and deveined
  • 3 shallots, diced
  • 1 tablespoon of minced garlic
  • 4 cups Low Sodium Vegetable stock
  • 1 cup favorite bbq sauce (We used Hot Bone Suckin Sauce)
  • 1 tsp dried cilantro
  • 1 tsp smoked paprika
  • 1 cup frozen roasted corn (bought at trader joes)
  • 1 cup small pasta ( We used Orecchiette)
  • coarse salt and freshly ground pepper, to taste

Directions

  • Season the shrimp on both sides with salt and pepper
  • Bring 2 Tbs. oil to a medium-high heat in a large pot. Add corn and shrimp – Cook til shrimp is translucent. Set aside.
  • Add another Tbs. of oil, and add the shallots; sauté about 5 minutes, until they start to soften. Add the garlic and sauté until fragrant, about a minute.
  • Add the broth, bbq sauce, spices and pasta.
  • Simmer until the pasta is cooked through about 10 minutes. Stir frequently.
  • Add shrimp & corn last 3 minutes to warm throughout
  • Ladle into bowls and garnish with fresh cilantro if desired.

Whether you’re single, dating, engaged or married – These will make you happy!

I wanted Adam to be able to take a treat into work today so I whipped these up in about 15 minutes total last night while watching Revenge. (Side note: We just started this series on Sunday and are 19 episodes in…Obsessed.)

With 4 ingredients, a 15 minute time-frame and a bit of love, you can make these to wow your valentine.

Nutter Butter Truffles

Ingredients

  • 1/2 package of nutter butters
  • 4 oz of cream cheese, softened
  • 12 oz hershey kiss semi sweet chocolate chips
  • Red Sprinkles

Directions 

  • Add your nutter butters to a food processor or blender and pulse til in crumb form (If you don’t have either you can smash in a plastic bag)
  • Mix 4 oz of cream cheese to your nutter butter crumbs (with your hands!)
  • Add 3/4 cup of chocolate chips to your “batter” if desired
  • Melt remaining chocolate chips in microwave
  • Roll your batter into small balls
  • Dip into chocolate – place onto wax paper for chocolate to harden
  • Sprinkle with your favorite color sprinkles

I didn’t expect dinner to be such a hit since it came together within 25 minutes, but since Adam and I both liked it so much – I have to share!

Veggie Skillet Lasagna 
Ingredients
  • 1 tbsp. extra virgin olive oil
  • 1/2 onion chopped
  • 1 Tbsp minced garlic
  • 8 lasagna noodles, broken into 2 inch pieces
  • 1 (28 oz) can diced tomatoes
  • 1 large zucchini, sliced
  • 1/4 cup fat -free ricotta cheese
  • 1/4 cup shredded mozzarella, plus more for topping
  • 1/4 cup parmesan cheese
  • Salt & Pepper to taste
  • 1/2 tbsp Red Pepper Flakes (or less if you don’t like heat)
  • 1 tsp Italian Seasoning

Directions

  • In a large skillet, add olive oil and heat over medium heat.  
  • Add onions and cook, stirring frequently, until onions are translucent.
  • Stir in minced garlic and cook for 30 seconds or so until fragrant.  Remove from heat.
  • Drain the tomatoes, reserving the liquid into a liquid measuring cup.  Add water until it reaches the two cup mark.
  • Add the tomato water to the onions and garlic mixture in the skillet.
  • Add in 1 tsp. salt and stir to combine.
  • Layer the broken lasagna noodles over top.
  • Top with the drained tomatoes and spread evenly.
  • Cover and cook over medium heat for 10 minutes, stirring every so often so the noodles don’t stick, always ensuring the noodles stay submerged int the tomato mixture.
  • After 10 minutes, uncover and layer in  zucchini.  Cook for 8 minutes more until noodles and squash are tender and cooked through.
  • Add spices to taste.
  • Remove from heat and stir in 1/4 cup parmesan, 1/4 cup ricotta and 1/4 cup mozzarella.
  • Stir together until melted and sauce becomes creamy.
  • Top with additional mozzarella, if desired.

I calculated the nutrition for this recipe and if you eat 1/4 of the skillet it has 255 calories, 32 carbs, 9 grams of fat, 3 grams of fiber and 88 grams of sodium.

Del Frisco’s

Adam loves trying out different Steakhouses in NYC so when I asked him where he wanted to go for his birthday this past weekend, it was no surprise he picked Del Frisco’s. I had to make the reservation about a month in advance to get the time we requested which surprised me because when we got there this place was HUGE. Del Frisco’s is located near Rockefeller Center and has two levels that can seat over 550 people. Impressive. It paid to make a reservation early though, we had a roomy booth for the two of us!

After we said “Cheers!” the feast began.

Our first appetizer was Shrimp Cocktail. I don’t usually like the cocktail sauce but since it came on top of it and not on the side, I tried it. Pleasantly surprised that it was a tad spicy and extremely fresh. You can tell the shrimp has never been frozen, which is very important.

After we ordered the Shrimp, I remembered I’d read raving reviews on their crab cake. Being from Maryland I don’t order Crab Cakes out-of-state but figured I’d make an exception to judge theirs.

It definitely had no breading (win!) and was very good – But I still like Maryland’s better, obv. The spicy lobster sauce it was placed upon was pretty tasty as well.

We also ordered a caesar salad to split – which they split ahead of time for us.

My dinner choice was salmon… Which was a tad overcooked, but hey – it’s a Steakhouse so I didn’t complain.

Whoops a little blurry – I didn’t want our waiter thinking I was a weirdo. This was cauliflower & brie au gratin and it was soooo good – I would have eaten the entire thing if we hadn’t had so much other food on the table.

Oh and these. Lobster Mashed Potatoes? I think this might be better than Lobster Mac & Cheese – which has always been my favorite!

We’re not ones to deny dessert and plus, we were celebrating!

Banana Bread Pudding with Vanilla Ice Cream. Definitely my favorite part of the meal, but that shouldn’t surprise anyone!

All in all I would recommend Del Frisco’s to someone looking for a Steakhouse in NYC. It’s in an easy to get to location, wonderful service, amazing flavor (a little on the salty side – but that doesn’t bother me) and a great ambiance. I would also only come here for a special occasion because I don’t think spending $300 on a dinner for two every weekend is in our budget 🙂
