Skinny Funfetti Cheesecake {Valentine’s Day Style}

 

I am a sucker for pretty things that are the color pink. When I went to Target a few weeks ago, I spotted pink and red sprinkles, small vases with love quotes and sparkly valentines day cards and of course I just had to purchase them. Adam loves funfetti just as much as I do (soulmate!), so last week I made this cheesecake as his Birthday cake. I used my Valentine’s Day sprinkles in this recipe and it turned out better than we expected for being so “healthy”. This would be perfect to make for your significant other this weekend since bikini season is right around the corner… Um, hopefully.

Skinny Funfetti Cheesecake  {Valentine’s Day Style}

Ingredients:

  • 2 sleeves of Low Fat Graham Cracker (Or use Gluten – Free), crushed in food processor or by hand
  • 3 Tbsp. Light Butter, Softened
  • 8 Oz. Neufchatel
  • 8 Oz. Fat Free Cream Cheese
  • 1/2 C. Organic Sugar
  • 6 oz. Vanilla Greek Yogurt
  • 1 Egg
  • 1/4 cup Egg Whites (or from 2 Eggs)
  • 1 1/2 Tbsp. Corn Starch
  • 1 Tbsp. Flour
  • 1/2 Tsp. Vanilla
  • 1/2 C. Valentine’s Day Sprinkles

 

Directions:

  • Preheat the oven to 350 degrees F.
  • Mix together the graham cracker crumbs and butter until combined.
  • Coat the inside of a 10″ spring form pan with cooking spray and press the crumbs onto the bottom.
  • Bake until browned, about 5 minutes. Let cool, about 10 minutes.
  • Beat both cream cheeses and the sugar with a mixer on medium-high speed until smooth, then beat in the greek yogurt on a lower setting.
  • Lightly whisk the egg whites in a bowl, then add to the cheese mixture along with the whole egg, corn starch, flour and vanilla.
  • Beat on medium speed until fluffy, 3 minutes.
  • Add the sprinkles to the mixture last and fold in until distributed pretty evenly through the cheesecake mixture. Pour over the cooled crust.
  • Bake until the cake is set but the center still jiggles, about 40 minutes.
  • Remove from the oven and run a knife around the edge, then cool.

I whipped up these mini desserts in 5 minutes and thought they’d be the perfect treat for a July 4th celebration! I only did measurements for Adam and I so this would be best for a small crowd. (Easy to double/triple this recipe)

 Berry Cheesecake Parfait (Serves 2)

Ingredients

  • 2 sheets of graham crackers
  • 2 tbsp fat free cream cheese, softened
  • 1 tbsp sugar
  • 2/3 cup of Tru Whip (or cool whip)
  • 1/2 cup strawberries, sliced
  • 1/2 cup blueberries

Directions

  • Crumble 1 sheet of graham crackers – Divide into each glass as your “crust”
  • Mix cream cheese and sugar until combined
  • Fold in Tru Whip with cream cheese mixture
  • Layer 1/4 of mixture onto crumbled graham cracker “crust”
  • Add sliced strawberries & blueberries
  • Layer in remaining cream cheese mixture
  • Add more sliced strawberries & blueberries
  • Top off with extra Tru Whip (if desired)
  • Place remaining graham cracker strips into top of parfait

Workout It says it burns 1000 calories but it’s WAY off. It burns about 200 in 22 minutes though 🙂

So about that breakfast… I’ve been eating it every.single.day. for the past two weeks and I haven’t gotten sick of it yet! It tastes like dessert and we all know that i have sweet teeth!! Once it gets warmer I’m over the eggs & oatmeal and am ready for ice-cold smoothies. I’m a girl who eats every 2 hours (as you can see above) and this really satisfies my belly for quite a while!

Blueberry Cheesecake Protein Smoothie

Ingredients

  •  1 cup organic frozen blueberries
  • 1 scoop of Chocolate Protein (I use MRM)
  • 1 scoop of 0% greek yogurt (plain)
  • 2 tbsp PB2 (or 1 tbsp of your favorite nut butter (peanut, almond etc)
  • 1 cup Unsweetened Almond Milk
  • 1 tbsp sugar-free cheesecake jello pudding mix
  • 1 triangle of laughing cow cheese
  • 1/4 of a graham cracker sheet

Directions

  • Mix everything in blender until smooth (if you are not using FROZEN blueberries — use ICE)
  • Enjoy!

 

Cafe Chardonnay

Cafe Chardonnay came highly recommended to us by my Aunt so we made reservations for Saturday night.

We were seated the second we walked in ( I love when places don’t make you wait when you’ve made a reservation!) on their upper level with a balcony view of the entire restaurant.

They brought a warm bread basket with a baba ghanoush spread at the same time they delivered our drinks. We loved the dip and thought it was a nice (healthy) alternative to butter.

We ordered the Caesar salad and Lobster Bisque appetizers to split with each other. The lobster bisque soup had TONS of lobster chunks and wasn’t heavy to the point where it hurt my stomach.

The Caesar Salad was a winner too. I don’t like Caesar’s at too many places since the dressing is usually heavy, but this one was perfect.

We skipped choosing from the regular menu and went with specials of the night. I chose lobster & scallops with a corn ragout. Adam chose the rib eye – The kid loves his steak! My lobster & scallops dish was phenomenal. It was a little heavy so I only ate about half but the flavors really mixed well. There was more lobster than I anticipated and the scallops were perfectly sautéed.

Adam’s steak was just “OK”. Personally, I don’t think steak should be ordered anywhere other than a steakhouse. I think he just got excited for the possibility of having red meat ( I never cook it) and ordered it right away. He said it wasn’t horrible, but it wasn’t amazing. His plate was still clean!

Per usual, we ordered dessert. The table next to us had a HUGE piece of deep dish apple pie a la mode that I eyed up during dinner. It was nothing like I’ve ever seen before, but we ultimately went with the cheesecake at Adam’s request.

The homemade cheesecake was topped with blueberries and drizzled with raspberry sauce. To.Die.For. This was no small piece and we were stuffed before it even came out. Somehow we managed to clean the plate… Shocker, I know.

While Cafe Chardonnay is not as “trendy” as Coolinary Cafe & Christopher’s Kitchen, (we have a thing for C named restaurants?) it’s one of those sophisticated restaurants that serves consistently classic yet fresh food, has knowledgeable and attentive servers and isn’t overly pricey (like places in Palm Beach).

That’s my last restaurant review from Florida but I do plan on making a small post on other key places to check out while on vacation there!

Tramonti in NYC

Last weekend my brother Keith and his girlfriend, Brittany, came up to visit!

We both went our separate ways while roaming the city but had plans to meet up for dinner at the restaurant, Tramonti. My brother was the one who suggested this restaurant and it was a good recommendation! Thankfully, we made reservations because the restaurant was tiny and NYC was crowded.

Adam and I split a salad that was on the specials menu which consisted of spinach, green apples, goat cheese, candied walnuts and a light dressing. I wasn’t a fan of these particular nuts (twss?)- they were too chewy. I was all over that goat cheese though!

For dinner, I ordered another “Special of the Day”. Butternut Squash Ravioli in a butter and sage sauce. VERY delicious!

Keith and Brittany split the gnocchi and a Caesar salad which they said was phenomenal.

It’s no shocker my husband had to order the most expensive thing on the menu – Veal chop, mashed potatoes and broccoli rabe. Since the only thing left on his plate was a bone – I think its safe to say he enjoyed it as well!

Adam and I chose the ricotta cheesecake and vanilla ice cream. The ice cream was no joke. I think they may have put more than a pint in our bowl!? The cheesecake was amazing… Not too sweet, which was great because the Ice Cream was a nice balance.

Keith and Brittany went with tiramisu and chocolate ice cream. Clean plates all around!

We were going to head to Rolf’s  after dinner but well…we’re kinda old and were exhausted after a big meal! It’s probably best we didn’t attempt to go there because I heard there was a huge line out the door. Old people need sleep…

5 more days til Christmas!

Questions: Have you seen the Christmas Tree at Rockefeller Center? It’s so beautiful but extremely packed. I would suggest going the weekend after they light it – Not the weekend before Christmas (like us)
