July 4th Fun

My 4th of July started off with an American themed SoulCycle class. I was loving the playlist with songs like this and this.

I came home to a sweet surprise from my husband – A customized 4th of July breakfast menu on red & white polka dot paper written in blue. I chose a Protein Pancake and it hit the spot!

We had ZERO plans for the day so we lounged around for a while before heading out for a bike ride. We ended up riding for about 2 hours and my legs are suffering from spinning + biking.

We made a pit stop at Pier 13 in Hoboken for a couple of reasons. A.) We needed water desperately and B.) I’ve been dying to try Amanda’s Bananas food truck version of frozen yogurt for quite some time now.

The “Frozen Yogurt” is just a frozen banana and then you get it topped with any toppings you’d. I went with the “Banana Cream” flavor and added nutella + 4th of July sprinkles and Adam went with S’mores + sprinkles

SO good… We will definitely be back. We make the banana part at home all of the time but don’t have the fun toppings like they do!

Pier 13 has a few other food trucks we wanted to try, but it was just too hot to be eating pizza, a cheese steak or a lobster roll. I’ll be back for you Luke’s Lobster.

Workout It says it burns 1000 calories but it’s WAY off. It burns about 200 in 22 minutes though 🙂

So about that breakfast… I’ve been eating it every.single.day. for the past two weeks and I haven’t gotten sick of it yet! It tastes like dessert and we all know that i have sweet teeth!! Once it gets warmer I’m over the eggs & oatmeal and am ready for ice-cold smoothies. I’m a girl who eats every 2 hours (as you can see above) and this really satisfies my belly for quite a while!

Blueberry Cheesecake Protein Smoothie

Ingredients

  •  1 cup organic frozen blueberries
  • 1 scoop of Chocolate Protein (I use MRM)
  • 1 scoop of 0% greek yogurt (plain)
  • 2 tbsp PB2 (or 1 tbsp of your favorite nut butter (peanut, almond etc)
  • 1 cup Unsweetened Almond Milk
  • 1 tbsp sugar-free cheesecake jello pudding mix
  • 1 triangle of laughing cow cheese
  • 1/4 of a graham cracker sheet

Directions

  • Mix everything in blender until smooth (if you are not using FROZEN blueberries — use ICE)
  • Enjoy!

WIAW & Cardio Circuit Workout

Well, we got quite a bit of snow yesterday. WHAT IS GOING ON? Hurricanes, earthquakes & snowstorms in one week? Mother Nature is on a roll.

Good news is, I got to leave work early! I despise working out after work but since today was a “half day” I snuck in a little somethin’. Is running on a treadmill boring to anyone else? If so, this is the perfect workout for you! I turned on the movie, Love Actually, and made this circuit up to beat the boredom.

That workout might not look like much but it left me feeling quite sore today!

What I ate Wednesday is back!

 Breakfast: Pumpkin Greek Yogurt with Pumpkin Granola (tis the season!)

Snacks: (Throughout the entire day)

Lunch: Chelsey’s Lentil Stuffed Pepper Soup (made by Adam!) & Grilled Cheese Sandwich

Dinner: Shrimp, Pasta, Artichokes, Feta & sun-dried Tomatoes

Dessert: Smashing S’mores (These are quite addicting!)

30 days of thanks – Day 6 – I am thankful for my mom. Even though she wasn’t the best cook, she was always the best mom. My biggest cheerleader, a strong role model and the number one person I want by my side when I’m feeling sick. Nothing tastes better than a mom’s (heated from a can) chicken noodle soup 🙂
